Bel Coelho explores the State of Rio Grande do Sul, known as the Europe of Brazil because of the large number of German and Italian immigrants who settled there. Successfully adapting to their new environment, they brought their national influences to Brazilian cuisine.

Visiting the Valduga family vineyards, Bel Coehlo learns to prepare the iconic local dessert  sagu, based on wine and cassava. At the Cantinho Doce, Bel is amazed by the sheer variety of cucas baked by the owner, Claudio. He creates variations on the German pastries using typically Brazilian ingredients, such as coconut and banana.
