The State of Rio Grande do Sul in Southern Brazil is the land of gaúchos – South-American cowboys who herd cattle, train horses and ride out over the plains of the Brazilian pampa. Bel Coelho shares their everyday life to find out about their specific culture, closely linked to red meat.

On a 'fazenda' ranch, Bel Coelho helps butcher a sheep that will be cooked over a fogo de chao, a fire in the ground outside the house. In Porto Alegre, she visits a 'rodizio', a rotisserie that serves every kind of cut of beef, pork, lamb and chicken on an ‘all you can eat’ basis. At the region’s last 'charqueada', Bel finds out about the old technique of salting and drying meat to preserve it, a traditional method on these farms.
