Fleeing hardship in their own countries, thousands of Syrians, Lebanese and Armenians arrived in São Paulo, Brazil’s biggest city, at the start of the twentieth century. Bel Coelho learns about their culinary traditions and how they adapted to Brazilian culture.

Joining Lebanese sisters Olinda and Simone in their kitchen, Bel Coelho tastes a 'thousand and one nights', a dessert of semolina cake, milk cream, pistachio and orange-blossom syrup. In a restaurant called Al Soltan, she explores the fusion of Brazilian and Arab cultures as she prepares boned ram and chicken stuffed with chili pepper, saffron, white pepper, almonds, grenadine syrup, spices and rice. Then in the Casa Garabed, she makes Armenian meat safihas, kinds of small pizzas.
