Bel Coelho explores the Sertão in arid inland Brazil. The country’s poorest region, it has too little rainfall for intensive farming, so necessity has forced the local inhabitants to come up with inventive dishes.

Bel Coelho prepares 'pintado', a typical regional dish, with local inhabitant Valdira. Bel is surprised by the wide range of ingredients: dried meat, corn, beans, smoked pork chops and pig’s foot. Near Serra da Capivara National Park – one of the most important archeological sites in the Americas – Bel Coelho meets Sueli and learns how to make 'requeijao cardoso', a cheese that can keep for months without refrigeration in the Brazilian heat.
