With the discovery of white gold (sugar) in the 15 th century, Recife in Pernambouc became a boom town. The local inhabitants still have a passion for desserts and share their secrets with Bel Coelho today.

On an 'engenho' (a traditional farm in the country near Recife), Bel Coelho finds out about the history of sugar-cane farming and tastes 'rapadura' – whole cane sugar. Back in the city, she learns to make 'bolo de rolo', a rolled cake with guava paste, the region’s most typical dessert. In Olinda in the suburbs of Recife, Bel Coelho enjoys 'tapioca', a kind of cassava pancake.
