Tasting Brazil
Episode :
The Cuisine of Minas

Watch trailer

Bel Coelho explores the state of Minas Gerais and finds out about the glorious history of this region with its gold and diamond mines. She follows in the footsteps of the gold diggers, whose diet was unavoidably basic. Their easily prepared dishes used local ingredients that kept well.

Bel Coelho cooks 'ora pro nobis' (literally ‘pray for us’) leaves. The slaves who discovered the vegetable did not know whether it was edible and so prayed for their safety before eating it. Bel Coelho also learns to prepare pig’s foot stuffed with pig’s knuckle. Pork is still the local inhabitants’ favorite meat today, since pigs will eat anything and can be penned on small areas of land.
